1 cup all-purpose four
1 cup uncooked quick oats
1 1/2 teaspoon baking powder
1/2 cup granulated sugar
6 tablespoons butter, softened
1/4 cup packed brown sugar
1/4 cup creamy peanut butter
1 egg
1 teaspoon vanilla
Stir together flour, oats and baking powder in a large bowl.
Beat the granulated sugar, butter, brown sugar and peanut butter in a large bowl; beat until well blended.
Add the egg and vanilla; stir until light and fluffy. Add the flour mixture; stir in well. Wrap the dough in plastic wrap and refrigerate for 1 to 2 hours.
Preheat the oven to 375. After dough is refrigerated, flatten on a piece of wax paper. Then either shape them into bars with your hands, or take a square cookie cutter and press down the edge of the square to make bars.
Bake for 10 minutes or until edges are lightly brown. Then transfer to cooling racks to cool completely.
