My Week in Review/Weekly Wrap-up/THMJ- 2/27

Another COLD week has gone by here in PA.  It is actually colder here than in Anchorage!

Last Friday, the kiddos again had their homeschool bowling league and continued to do really well! Kiddo #4 bowls with her beloved Pigie (as seen below)  :-)

They also worked on their Iditarod Trail Mail project.  Do you participate in it?  Your child's project, along with their photo, if you include it, will be carried by a musher on the trail!  Isn't that cool?  We will be tracking our musher and look forward to receiving our project back signed by him/her along with their standing in the race, time, etc.  Below is the picture that was on our project page.  I received notification today that our project was received.  The race is on March 7th and we can't wait!


Kiddos 1 and 2 had their online classes and Kiddos 3 and 4 learned about percents.



We had some fun family game night games and more snow



and one of the best things about homeschooling is that a Kiddo can decide he wants to bbq some dogs or that she wants to make a beautiful cake (I will do my best to get her recipe typed up for next week's Try a New Recipe Tuesday)




On Thursday, we attended the 2nd half of the herb program.  Remember last week when they made their own herb baskets?

Well, today was amazing.  The kids all made an entire meal-- from appetizers to a main course and then got to sit down and enjoy their fare.  They made two different types of dip (one to be served with carrots and one with crackers), salsa, chicken soup, lemon chicken, roasted cauliflower and herbed pita crips.  Oh, yes, and lemon mint tea.  Wow.  They chopped every herb, tomato and pepper.  They stirred and chopped and diced.  What an incredible program.  They had so much fun and learned quite a bit.  I am looking forward to even more programs there.






And, as Lent progresses, our Kind Words Cross is getting more lillies and we have decided to make our own Lenten candles.  Advent has candles, so the Kiddos thought that we could light a candle for every week of Lent.  I like the idea.  :-)

TOS Review- IndoctriNation

Today I am reviewing IndoctriNation: Public Schools and the Decline of Christianity in America by Great Commission Films.

Sobering, eye-opening, educational, provocative.....

This documentary hit home for me.  I have undergraduate and graduate degrees in Education and taught in a "blue ribbon" public school before having my children.



Although discouraged then by the "system" and promising myself that my future children would never step within those walls, I learned so much from watching this program that college and my many years teaching never taught me.

Did you know that the structure of our current school systems today are based upon the Prussian Model (under Nazi control) and was originally proposed by Karl Marx?

The first mandatory public schools in this country were in the 1800s.  Their purpose was to train huge numbers of children as quickly as possible for factory work.  Quality was not an issue.  They produced a large number of students with the minimum amount of knowledge to get by.  Has much even changed?

The film was made by Scottish filmmaker Colin Gunn.  In it, he interviews everyone from scientists to pastors, teachers to superintendents and he got an earful about the American school system.  There were students who candidly told him that even in the "best" of schools, they were exposed to drugs, violence, alcohol, sex and more at impressionable young ages.  Their parents have entrusted their safety and welfare to a system that does not provide it in so many ways.  Sad and very scary indeed. Many expressed being scared on a daily basis and how dangerous bullying has become.  There is an emotional plea from the father of a Columbine victim that profoundly touched me.  In addition, there are the issues that concern many Christian parents-- removal of even the mention of God, prayer, and Bible clubs from schools.  And let us not forget about the microphones being turned off during graduation speeches because Jesus was thanked.



Also mentioned is the pressure in schools (I witnessed this first hand) to medicate children without a true diagnosis to the point  of them being practically sedated.  Kids are not "good" unless they sit perfectly still for hours on end, not moving, not speaking, not thinking.  Other than being told what to learn and how to learn it, no matter their own individual learning style, interests or abilities.

I learned in college and in my own classrooms over the years that real learning takes place when a student sees, hears and DOES.  Hands-on, tactile learning stimulates parts of the brain that promote retention of material.  Sitting in a zombie-state for hours on end is not only unnatural, it is not conducive to real learning.  What kind of learning is taking place in the schools today?  Is the history revised according to political correctness or whatever tides the winds will bring?  Being told what to learn and how to learn and teaching to a test strips children of innovation, creativity and imagination.

These are many of the reasons why some of the best and brightest in this country and abroad (Gates, Jobs, Zuckenberg, even Einstein and Churchill) had not done well in educational settings.  Most of them even dropped out.

Do not forget the controversial Common Core issue, where classic literature (anything written before the 1900s) was for all intents and purposes removed and more "modern" even grossly explicit and inappropriate material substituted in its place.  Let us not even begin to address the mathematics under Common Core.  It boggles the logical mind.  Truly.  I have seen it.

This documentary is well worth your $19.95 and 102 minutes.  You will be changed.  You will be outraged.  You will be empowered.

When a friend is terminally ill.....



I have a friend who is dying.  It makes it all the more real by just typing it out.  Since I met her a couple of years ago, she was candid about her six-year battle with cancer.  And, I knew upon meeting her that she was not only a special person, but a real one.  We clicked right away and felt like we had known each other a long time.

She is a mutual friend of my best friend and I.  We don't know quite how to process it all.  Literally seeing her have no strength to stand after a chemo treatment was nothing in comparison to what we have seen the last week after 3 strokes have ravaged her.

Yet she still smiled and let us know that she was glad we were there.  There is nothing more difficult than trying to make small talk with someone who is not only gravely ill, but not able to really respond much.  We tried to be encouraging, smile and not let her on to the pain that we were feeling.  We assured her of our love and support and that we would help in any way we could (meals, prayers, driving her children to events, etc.)

I have asked "why" many times.  Why would a woman who is needed so much by her family (she has an 8th grade son and a profoundly disabled daughter who she dutifully has taken care of around the clock for 20 years) be taken so soon?  I have also asked when is enough enough?  When will her suffering end?

That answer came last night when we were advised that her husband was signing the paperwork for hospice care.  It is happening.

I have never experienced quite anything like this before.  I have had relatives who have been ill, but the onset was usually sudden and the outcome quick.  She has told us many times over the recent months that she was trying to get "things in order."  It hurt everytime I heard that.  It is unfathomable to me that she would know that she wouldn't see her son go to high school, college or get married. How difficult must it be to consider what will happen to her daughter without her constant care.  I cannot imagine her strength and determination to keep on fighting, even after two hospitals told her  to contact hospice, but she found a doctor who would try.  She underwent radical, aggressive chemotherapy these last months that took their toll on her.  Yet, she continued to be active in 4-H, care for her home, raise and support her kids, be a wonderful wife and teach several college classes a semester.  I admire that strength.  I need to tell her that.  Soon.  I wouldn't have blamed her if she would have given up a long time ago.  Many of us would have.  She has a physical and emotional strength that I could not imagine having in similar circumstances.

Although I haven't known quite what to pray for, I have prayed.  And, through all of this prayer, I have learned a few things.  I have learned that there is a peace that comes from complete and total trust in the Lord-- giving it all to Him.  I had to since I just couldn't handle it without Him.  When in church the other day with my kids, I felt a peace that I hadn't ever felt before.  It was like Him telling me, "I've got this."  It doesn't make it hurt any less, though.  I can only be consoled that even Jesus, when learning of his friend Lazarus' death, cried.  He was mourning a friend, too.  He has shared personally in what I am feeling.

I have also learned that the little things do not matter.  As my legs hurt from going up and down the steps countless times doing wash, I now realize that it is a blessing.  I wonder how much my friend would love to have sore legs from doing wash right about now.  Whether or not there is something out of place, needing a bit of cleaning, the growing laundry pile or a million other things, it really doesn't matter, does it?  This woman is dying.  I bet she would give anything right now to have more time with her children or be worrying about what wasn't added to the shopping list.  I'm sure she would love to be able to sweep up crumbs on the floor rather than lying on her death bed.  That makes it real to me. It slaps you in the face.

Life is too short.  She is only 67 years old.  That is young in the scheme of things.  Is it worth it to complain, be angry, be petty when our days are numbered, too?  We may not know exactly when like she does, but we should never take for granted how many days we may have left.  Shouldn't we be cherishing every day as if it were our last?  Perhaps we all need to remember people who are suffering, dying or alone and be grateful for what we have.  I am deliberately trying to be more joyful, to finding the good in every situation and being grateful for every moment that I have my family, my health and my life.  I think my friend would want it that way.

My Week in Review/Weekly Wrap-Up/THMJ- February 20/21

Wow, I cannot believe I am writing another week-ending post.  The time is just flying by, even though we are chilled to the bone here in the Northeast and covered with snow! (not as much as New England, though, thank goodness!)

Last Thursday, the kiddos, hubby and I went to the circus.  We hadn't been there in a couple of years and really enjoyed this year's production.  The first two pictures (on the top) are from the pre-show festivities.




Friday was supposed to be 4-H .22 rifle, but we played hookie.  The temperature was in the negative digits and the range, although indoors, is not heated.  Hubby works outside, so I didn't think that he needed to spend another few hours freezing and the kids and I weren't too keen on the idea, either.

On Saturday, Valentine's Day, Kiddo #4 made us all heart-shaped pancakes and her beloved "Pigie" turned 4.  She and I both received beautiful flowers from my hubby and other fun gifts from my dad.


In honor of her sweet Pigie's birthday, she baked cupcakes and made up a scavenger hunt for my mom and I to do.  It was very cute and original.  :-)




Also on Saturday, Kiddos 1 and 2 attended a 4-H program at a local college.  This month they made a silly-putty substance (I forget what they called it) and homemade ice cream and whipped cream.



This week, there was more snow, President's Day lapbooks


Wednesday began the season of Lent.  Our Kind Words Cross went up.  Every time a Kiddo says something kind to someone else, they place a beautiful lily on it.  By the time we celebrate the Resurrection on Easter, it will (hopefully!) be covered with flowers and the words above it will then read "Rejoice" instead of "Repent."



On Thursday, we attended an amazing homeschool program where the Kiddos learned all about herbs and got to plant their own herb baskets.  The program ws held on what was an 18th century farm.  I just love the history that is all around us!




Next week is Part 2 of the program-- cooking with herbs.  We can't wait!  :-)

Coconut Flour Apple Cinnamon Muffins (low-carb!)

These were another delicious grain-free treat that really surprised me.  They went over really well with my whole gang, too.  I modified the recipe from one I found at WellnessMama.

Ingredients:

5 eggs
1 cup unsweetened applesauce
1/2 cup coconut flour
2 tablespoons cinnamon
1 tsp. baking soda
1 tsp. vanilla
1/4 tsp. coconut oil
2 tablespoons honey (optional)

Preheat the oven to 400 degrees F.  Grease a muffin pan with coconut oil. (next time, I will grease the muffin cups)  Put all ingredients into a medium size bowl and mix well.  Let sit 5 minutes.  Use 1/3 cup measure to spoon into muffin cups.  Bake 12-15 minutes until starting to brown and not soft when lightly touched on the top.  Let cool 2 minutes.  Enjoy!  We sure did!  They were gone within minutes.  :-)

My Week in Review #24

My Week in Review/Weekly Wrap-Up/THMJ- February 13

It has been a couple of weeks since I posted a weekly wrap-up.  Things have been busy here with school, activities and other responsibilities.

Last week, the kids started their .22 rifle program with 4-H.  Kiddo #4 is thinking about joining them tonight!  :-)



Last Saturday was the Father-Daughter dance at our church.


Monday and Tuesday, Kiddos 2, 3 and 4 went to Taekwondo where they are also doing sparring. They are getting really good!  :-)  I have to remember to take some pictures next week!  

On Wednesday, we ventured into the city to learn about a good and holy woman by the name of St. Rita of Cascia.  Her life was a shining example of the love and forgiveness we are called to as Christians.  When her husband was brutally murdered, she convinced her sons to forgive and not avenge his death.  Her sons both died from illness, but she bravely continued in her quest.  She convinved both her husband's family and that of the rival, feuding family to make peace with each other and forgive.  There was also beautiful artwork there, including the one below depicting the Baptism of Jesus.  After our visit, we headed to lunch.





Later that evening, we got to watch the launch of the Falcon 9 rocket live.  I always get goosebumps watching something like that.  We are sending up a satellite to monitor weather patterns and the flares from the sun that could potentially knock out power grids, etc.


On Thursday, we went to the circus!  I will share photos next week.  :-)

Today (Friday), we had our homeschool bowling league.  Tonight will be .22 rifle and tomorrow, Kiddos 1 and 2 are looking forward to a 4-H teen program at a local college.

Banana Bread made with Coconut Flour

We love Banana Bread in this house.  So, I was a bit skeptical making it without regular flour or sugar.  Boy, was I wrong!  :-)

Ingedients:
1 cup coconut flour
2-3 very ripe bananas
4 eggs
5 tablespoons honey
2-3 squirts of agave syrup
1/4 tsp. sea salt
1 tsp- 1 tbsp cinnamon (I used closer to a tablespoon)
1/2 teaspoon baking soda
1/4 teaspoon nutmeg
1 tablespoon vanilla

Preheat oven to 300 degrees.  Oil pan and then line with parchment paper.  Mash bananas.  In same bowl, add honey, vanilla, eggs and agave.  Mix well.

In a separate bowl, combine coconut flour, baking soda, sea salt, cinnamon and nutmeg.

Add dry ingredients to the wet and mix until just combined.

Spoon batter into your pans. I couldn't find my bread pans, so we had round banana bread, lol.  Bake for around 1 hour and 15 minutes.  Edges should be golden brown.  Remove from oven and let sit in pan for 15 minutes to cool.

Great Resources for Home and School

Here are some items that I found on Amazon that are wonderful resources for home and/or school offered for very good prices.  Some are number one best sellers, too.  It is February, that time of year where we homeschoolers look for new ideas, shop for discounted items to help make the winter days more tolerable.  Some even start picking up items for the next school year!   affiliate links included













*I own this laminator and it has become an invaluable tool in our home and homeschool.  I saw the other day that Walmart carries it for over $42, so this is definitely a bargain price while it lasts.  It has to be one of the best purchases I ever made.*
























The Leap Frog series is a wonderful resource that we used when our children were young.  I know that it was a help in them reading long before kindergarten age.
