Made these tonight for the first time and they were a hit. :-)
4 pounds of potatoes, peeled and sliced (about 5 large potatoes)
3 tablespoons all-purpose flour
1/4 tsp. sea salt (more if you prefer)
1/4 tsp. pepper
1 1/4 cups mild cheddar cheese
1/2 cup sliced American cheese broken into small pieces (the original recipe called for Swiss.)
About 2 tablespoons minced onion
1 1/2 cups milk
Place a third of the potatoes in a 3qt. baking dish coated with cooking spray. In a small bowl, combine the flour, salt and pepper.
Sprinkle half over potatoes.
Sprinkle with 1/4 cup of each cheese and half of the onions. Repeat layers. Top with remaining potatoes. Pour milk over all.
Cover and bake at 350 degrees F for 50-60 minutes or until potatoes are nearly tender. Sprinkle with remaining cheese. Bake, uncovered for an additional 10 minutes longer or until cheese is melted and potatoes are tender.
