Ok, back to our happy recipe share! :-)
We have been doing lot of canning here. This past weekend, my husband and I found a local farm that picks their corn about 3-4 times a day (so it is VERY fresh). We bought a bushel (50 ears) and are having fun canning them. Ok, I guess we're canning geeks, because we are really enjoying all of our canning. So far, we have done carrots, corn, peas and peaches. :-)
Here is the "recipe" for our corn canning:
start with ears of corn
remove corn (this can be very tricky. We find it is much easier when we find ripe and mature corn)
load it into clean and sanitized jars
fill with boiling water and place lid and ring on jar
place into pressure canner for 55 minutes at 10 pounds of pressure

Lisa, the one thing I enjoyed about our time in the midwest was purchasing fresh corn from the local farmers and freezing it....love watching your sweeties in the kitchen learning with you!
Thanks for hosting and have a great Tuesday!
Hope you are having a great day and thanks for hosting!

Great idea to can it. I live in an area that has many corn fields. I will have to think about doing this also. Thank you for adding this to my Our Favorite Things Link Party.
Your corn is beautiful! I have never canned anything but Keilee and I would love to try.
I have always wanted to try canning!
Thanks a lot for hosting Lisa! I love corn and enjoy it a number of ways. Today is indeed a very important day. We must never forget what happened and the lives lost in the terrorist attack.
looking forward to doing some of this when it cools off a bit in FL
good for you! you will be blessed again in the winter!
I have been freezing corn this year. Maybe I'll give this a try. I have been doing tons of canning and freezing. I love it too :)
