Try a New Recipe Tuesday- March 19


It's Tuesday and that means it's time for another week of Try a New Recipe Tuesday!  There have been SO many wonderful recipes shared each week.  My list of those "to make" gets longer and longer.  :-)

This week I am sharing my mini-cupcake recipe.  Kiddos 1 and 4 made them for us all on Saturday, along with another batch of delicious donuts, which I wrote about last week.  If you missed last week's recipe share, or would like to take a look again at either the donuts or the 65+ recipes that we shared, you can click here.

Mini-cupcakes
1 cup flour
1 teaspoon baking powder
1/3 cup milk
6 tablespoons butter, softened
½ cup plus 1 tablespoon sugar
1 large egg
2 teaspoons vanilla

Cream softened butter with sugar.  Add egg and vanilla.  Mix well.  Add dry ingredients a little at a time until well blended.   







If you would like to make chocolate cupcakes, add unsweetened cocoa a little at a time (start with a teaspoonful and work from there) to your liking for taste and color.  This is what the kiddos did on Saturday.  :-)



12-13 minutes @ 350 degrees

Frosting 
3 cups confectioners' sugar
2 tablespoons milk
1/3 cup softened butter (5 1/3 tablespoons)
2 teaspoons vanilla


They were absolutely delicious!  and really pretty too, as Kiddo #1 is getting quite skilled with the frosting decorating tools, don't you think?  :-)

I shared the Bean Chili recipe I made last week and will be back tomorrow to link up my Kids and a Mom in the Kitchen. We made Blueberry Sauce and then used it to make yogurt parfaits.
