Try a New Recipe Tuesday- March 11

Oatmeal Breakfast Bites

A couple of weeks back on Try a New Recipe Tuesday, Mindie from the Adventures of a "Born-Again" Farm Girl shared these delicious treats.  Thanks SO much, Mindie.  I made them with my family and boy, were they good.  They thought they were getting cookies for breakfast, and I was assured they were getting a good and wholesome "meal."  I made them the day before Ash Wednesday (Mardi Gras, Fat Tuesday, Carnivale) :-)

3 cups oats
1 cup flour
1/2 cup brown sugar
1 tsp. cinnamon
1 cup butter, softened
2 tablespoons real maple syrup

Combine dry ingredients



Add softened butter and syrup.  Mix well.  I used my hands.  :-)

Make small balls and flatten them onto either a greased cookie sheet or one covered with parchment paper.  Bake at 375 degrees for 10 minutes.  Let cool in pan for a few minutes.

Enjoy!  My family loved this delicious and wholesome breakfast treat.  :-)

Homeschool Mother's Journal/Weekly Wrap-Up- March 7-8

Even though it has been cold, snowy and dreary, the weeks still are going by rather quickly.  We bought everything to plant our seeds and cannot wait to get started, perhaps over the weekend or sometime next week.  I can't wait until Spring!  :-)

On Saturday, my boys had their first driving lesson in their Tractor Safety class with 4-H.





Meanwhile, my daughter was selling her homemade bracelets with a friend at a local craft fair.  They did so well. I am proud of them both.  :-)  I went straight there from the tractor class so I could spend some time with the little entrepreneurs. (and relieve my parents who had been there for several hours) :-)


On Sunday, we made our annual trek to the local RV show.  We can dream, right?  :-)  






Lent has begun.  We put up our Kind Words Cross.  Each time one of my children says a kind word to each other or to us, they put an Easter lily on the cross.  It is my hope, that by Easter, it will be covered with lillies and be a beautiful reminder of the Resurrection.  The word "Repent" will also be changed to "Rejoice" on Easter.





We received our ashes on Wednesday, which remind us of our sinfulness and mortality.  We are also reminded that although the journey to Easter is filled with sacrifice, fasting, prayer and almsgiving, we are to rejoice on that day, because we have been saved by the Blood of the Lamb.

We end our weeks during Lent with the Stations of the Cross for children at our church on Friday afternoons.  What a sobering and beautiful reminder of His incredible sacrifice for us.  You follow and pray on every step Jesus took from being comdemned to death to being laid in the tomb.

Try a New Recipe Tuesday- March 4

Welcome to another week of delicious recipe sharing!  :-)  We had yet another snowstorm on Monday, so my children and I decided to try a new recipe, because you just have to bake when it snows!  lol.  We made Apple Cinnamon bread.  It is linked in the first spot below.  It was SO good.  :-)

Apple Cinnamon Bread

It snowed yet again today (I think we have now surpassed 6 feet of snow this winter) and when it snows, it means something warm and delicious has to get baked.  :-)

We tried a new recipe today for Apple Cinnamon Bread.  It can also be made with carrots or zucchini.  The house smelled so good that my children said that no candle could ever compete with "the real thing."

Ingredients
1/2 cup sugar
1/3 cup oil
2 eggs
1/3 cup milk
2 teaspoons vanilla
2 cups flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1 teaspoon cinnamon

depending on the variety you choose:
1 cup grated apples or 1 cup grated carrots or 1 cup of grated zucchini

Preheat oven to 350 degrees F.

Grease bread loaf pan.

Peel and grate whichever fruit/veggie you chose



In a small mixing bowl, add sugar.  Next, sift your flour, baking powder, baking soda and spices together. Stir.  Make a well inside your dry ingredients, pour the liquid in the center.  Add your apple (or other) mixture and nuts.





Pour the batter into your greased bread pan.



Bake for 55 minutes.  Test with a toothpick.  Enjoy!  We LOVED it here.  :-)
