Croatian Bear Paw Cookies

As we continue our study of the geography and culture of Europe, we made these delicious cookies. Croatia, a nation right across the Adriatic from Italy, has much of the Italian language and culture, but also has a distinguished identity of its own.  I had never learned about this nation as a child because it was part of communist Yugoslavia until the 1990s.





We enjoyed these cookies from a traditional Croatian recipe.

Ingredients:
2 1/2 cups flour
1/2 tsp. baking powder
1 cup of sugar
3 1/2 cups ground walnuts (I used ground almond meal)
7/8 cup of butter (1 cup minus 2 tablespoons)
1 egg
2 tablespoons honey
1 tsp. vanilla (I used 2)
powdered sugar for coating

Combine together walnuts, flour, baking powder and sugar.  Add egg, honey, vanilla, butter and work in a dough.  Put in fridge for at least 30 minutes.  Preheat the oven to 350 degrees.  Grease the Madeleine molds and sprinkle lightly with flour.  Set aside.  Break off pieces of dough and lightly press into cookie molds.



Bake for 15 minutes (or until golden brown) and coat with powdered sugar while still hot.

Enjoy!  We sure did!  The kids are already asked for more.  Definitely a hit here!  :-)

Apple Crisp in the Crockpot

I had so many apples still left over from our picking adventure, so I began to look up recipes.  And, to find one that calls for the crockpot was an extra plus.

The recipe I found was from stockpillingmoms.com for an apple crisp in the crockpot and boy, was it good! Kiddo #1 and Hubby just asked me today if I could make some more tomorrow!  :-)

Ingredients:
5 cups apples, sliced
1 cup of oats, not quick
1 1/2 cups flour (whole wheat or regular.  I used regular)
1 cup packed brown sugar
1/2 cup granulated sugar
3 tsp. cinnamon
3/4 cup butter, unsalted

Spray crock pot with nonstick spray.  Add apples.



 Melt butter and mix with all remaining ingredients.



Pour mixture over apples.



Cook on high for 3 hours or low for 4-6 hours.  Serve and enjoy.



You can serve with ice cream or whipped cream (optional)
