Try a New Recipe Tuesday- October 8

It is Tuesday (almost!) and that time of the week again!  I really enjoy reading (and trying) your recipes with my family.  :-)

My children made an uncooked fruit jam in 4H on Saturday and I have linked it up in the first spot below.  It was easy to make and SO delicious!

Uncooked Fruit Jam

On Saturday, my children, along with members of their 4H club, made peach and plum jam!  It was SO delicious on bagels and toast! (and just in a spoon, too!)  :-)

2 cups fruit- cleaned and mashed with skins removed.

You can use any kind of fruit.  Kiddos 1, 2 and 4 chose peaches.  Kiddo #3 chose plums. Other children chose kiwi.
1/2 cup water
1/4 cup chia seeds
1/4 cup lemon juice
Grated lemon peel
1/4 cup sweetener (use either sugar, raw sugar, honey, agave syrup or any other sweetener you prefer.  we used agave syrup at the meeting)

Mix together water, chia seeds, lemon peel and sweetener.
Skin the fruit and mash.  Mix together with chia seed mixture

Put in container and eat on toast or add to smoothies or any other way you prfer.  You can keep this in the refrigerator for about 3-4 days.  It can be frozen  and will keep for months.  Thaw before using.

Homeschool Mother's Journal/Weekly Wrap-Up October 5

Wow, the week has come to and end and it is October already!  :-)

When the week began, we were still in Delaware.  On Monday, we visited Assateague and saw the wild horses.  It was an absolutely amazing experience that you can read more about (and see the photos) here.

On the way back to Delaware from Maryland, we stopped in Ocean City and spent some time in the arcade on the boardwalk.  The kids always love playing some games.  And, I loved how they all split the tickets evenly between them so they all got to take home a prize.  :-)

While walking on the boardwalk, we saw a memorial that was dedicated to all fallen firefighters and included a piece of the World Trade Center.  A good reminder amid the fun and frolicking of a shore town of how precious life is and to remember those who have died in protecting and serving others. (Sorry for the glare.  It was a very sunny day)

Tuesday was our driving home day.  :-(  We did enjoy lunch together on the way home.

We didn't go to co-op on Wednesday (kids just couldn't get up!), but Kiddo #4 enjoyed some baking and teaching her dolls the art of Rainbow Loom bracelet making.  :-)

The rest of the week had us getting back to the books and trying out new learning games such as part of speech dominoes

Field Trip Friday- October 4

It is time again for Field Trip Friday!  I love seeing all of the wonderful places that you visit with your families.  :-)  I am happy to be joining my friend Jen at Chestnut Grove Academy for her wonderful linkup.  Also co-hosting with me is Misty from Mimi's House.  Be sure to visit their blogs, as well!  :-)

I was SO impressed with the posts last week.  Wow.  The posts included a myriad of amazing and educational field trips that included a wonderful music video made on a trip to a beach, seeing the Dead Sea Scrolls, climbing aboard the Nina and Pinta, marching in Washington to defend life, an entire unit on the water cycle (including a fun trip!), a visit to an adventure farm and Rome!  :-)  What amazing memories you all have made with your children!   If you haven't seen these posts yet, click here to go to last week's linkup.  You won't be disappointed!  :-)

Thankful Thursday- October 3

I am so glad to again participate in Thankful Thursday.  I had missed writing these posts and taking the time to stop and realize how much for which there is to be grateful.

As those of you who read my blog know, we just came back from a long weekend in Delaware.  I am grateful for the chance to go there each year with my family and that there is a military base with accomodations that are both lovely and affordable for us.

I am thankful that the base is in the heart of Bethany Beach, with a lovely boardwalk and beach

as well as an amazing nature center

and fun miniature golf

and that Ocean City, MD is only a short drive away....

as is Assateague

I am also thankful that hubby and Kiddo #1 are able to go to the NASCAR race and enjoy it very much. (will have to share a photo or two in the future, as they are on Kiddo's camera)  :-)

I hope you find much to be grateful for in your lives this week!

Assateague National Park

There are no words that could do our experience at Assateague justice, so I guess this post fits in well with the Wordless Wednesday linkups.  :-)  Suffice it to say, it was amazing, awe-inspiring and we learned and saw so very much.  There are all kinds of different habitat trails (forest, marsh, beach, etc), that are breaktakingly beautiful and to see the wild horses living and thriving in those habitats was truly wonderful.  I took almost 100 photos there.  It was hard to pick just a few to share with you!  :-)
